A MEAL I'LL NEVER FORGET
Even as I type this post, my mouth is watering just thinking about the delicious meal I had at Parador Rojo. This small Colombian restaurant, hidden in the many streets of Elizabeth, served me undoubtedly some of the best food I have ever had. I ordered "Lomo de Cerdo y Pollo con Camarones" which was shrimp smothered in sauce over grilled chicken with sides of rice, potato salad, and fried Cassava. From the shrimp (which I love) to the peas (which I usually do not favor), everything on my plate (and Sabrina's plate ;) ) was delicous. I loved the authentic feel to the restaurant and the homemade taste to the food. I even got to practice a bit of my Spanish with the waiter! There is no doubt that I will be going back to Parador Rojo, but until then I'll just have to keep dream of the meal I'll never forget.
